Ingredients:
Serves 4
2 small zucchini
1 lb cooked hamburger
1 – 16 oz can of stewed tomatoes
1 cup of sliced mushrooms
1 – 6 oz can of tomato paste
1 16 oz package of ricotta cheese
1/2 cup skim mozzarella shredded
1/4 cup parmesan cheese shredded
1 tablespoon green onion, minced
1 teaspoon Italian seasoning
1/2 teaspoon each onion powder, garlic powder, ground sage, pepper & salt
Directions:
Preheat oven to 375 F. Coat a with nonstick spray.
- Slice zucchini thinly using a mandolin
- Mix the hamburger, tomatoes, tomato paste, green onion and seasonings
- Layer all the ingredients, starting with the zucchini, meat sauce and cheeses
Cover tightly with foil and bake 45 minutes. Remove foil the last 10 minutes to slightly brown cheese if desired. Remove from oven and let rest 5 minutes before serving. Enjoy!
Tip: Save calories by using diced white turkey instead of store sausage which includes fatty ground turkey skin.
