What started off as a conversation on Twitter about Ice Cream cakes turned into a fun little research project.
We were talking about ice cream cakes being a North American “thing” and to throw a spin on it @IrishSmileymentioned that she would be interested in a Gluten Free version. I know nothing about Gluten Free anything so I went looking.

A gluten-free diet is recommended amongst other things in the treatment of celiac disease and wheat allergy. It is a diet completely free of ingredients derived from gluten-containing cereals: wheat (including kamut and spelt), barley, rye, and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent.
Back to the topic of Ice Cream Cakes – it appears from my research that ice cream it self doesn’t have gluten, but if you were caking a crust or toppings there is where it would come from.
